An engineer by training, Chef Alvin Leung is one of only two self-taught chefs that has ever been awarded Michelin stars. With an outwardly “rock and roll” image, streaked hair, piercings and all, combined with an innate drive for precision and perfection in his cooking, Alvin’s cuisine has broken down long held conceptions of what Chinese food should look and taste like at his restaurant BO Innovation in Hong Kong.
In this 6 part series, Chef Alvin looks outside of China and to Asia for inspirations. He travels to 6 cities in search of their most iconic dishes. From Jakarta to Taipei, chef Alvin will eat his way through the food and cultural history of the region all the while keeping in mind his ultimate mission: to deconstruct each dish using his own unique method of molecular gastronomy and presenting it to the people most familiar with the original dishes – the chefs and restaurant owners that he visits!
