In this episode we look at the many ways Thai cuisine embraces that perennial favourite: chicken. Marion cooks classic chicken dishes like her family's favourite: 'Beggar's Chicken' which is braised in a soy broth and cooked in a big pot with lots of spices. She then makes the spicy chicken salad she ate as a child called Laab Gai - and is joined in the kitchen by Noi for Tom Kha Gai, a coconut based Thai chicken soup. Later Marion meets her friend Nym at a traditional roadside food stall in Cha-Am, where they help prepare a popular sticky rice snack called Khao Lam - which is intriguingly cooked over charcoal in bamboo tubes. Where are all of the recipes. I want to make Chicken laab Gai but the recipe is not here
