Alex has some 27 years' experience in hospitality, first completing his Hotel Management Tertiary education in Lebanon and then worked in various 5 star restaurants and hotels throughout Middle East and Australia. Executive Chef Bassam Rizkallah acquired over 20 years of experience in the hospitality industry, for 12 years he owned and managed his previous restaurant the Cedar Tree in Brighton.
The menu at Maroush is a showcase of vibrant creativity. Offering traditional dishes such as Warrak Arish (minced lamb in vine leaves) and Samaka Harrah (fish of the day seasoned with garlic, coriander, pine nuts and walnuts, topped with tahina & paprika.)
