Indeed, as reviewer Matthew Evans put it: “He could be cooking with more expensive ingredients at the top end of town but Matthew Kemp uses exemplary skill at a modest bistro. Every dish is a winner.”
The demand for Matthew’s food grew so much that after only a few years, Balzac relocated to larger premises. Restaurant Balzac is now housed in a graceful historical two-story sandstone building; a perfect setting for Kemp’s elegant cuisine, which combines old-fashioned British comfort food with classic French techniques and innovative modern twists.
The philosophy behind the restaurant is simple. Restaurant Balzac always uses the finest and freshest produce from Australia’s top producers to create innovative and interesting dishes. As Terry Durack attests: “Kemp’s food is always good to look at…..in almost every dish I try, there is that same careful interplay of texture and flavour.”
