Steamed Sesame Fish Fillet

Ingredients

  • Fish

  • 1kg of fish fillets (serves 6)

  • 150g Tahini

  • Lettuce leaves

  • Sweet & sour salsa

  • 2 tomatoes

  • 1/3 of a cucumber

  • 4 spring onions chopped

  • 8 lychees

  • 2 Aways Fresh piquillo peppers

  • Splash of sesame oil

  • Splash of extra virgin olive oil

  • Finely shredded mint

Method

  • Sweet & sour salsa:

  • 1.

    Dice and combine all above ingredients

  • Fish:

  • 1.

    Place fish fillets into tahini and coat.

  • 2.

    Steam them in a bamboo basket with lettuce leaves underneath to stop it sticking.

  • 3.

    Steam for 6-8 minutes depending on the thickness.

  • 4.

    Serve the steamed fish on a bed of sweet and sour salsa.
