Home Style Mayonnaise


  • 2 whole eggs

  • 1 ½ tbsp seeded Dijon mustard

  • 1 shallot

  • 2 tbsp cornichon vinegar

  • Salt and pepper

  • Up to 500ml canola oil


  • 1.

    Place eggs, shallot, mustard and vinegar into blender and buzz until a lighter colour is achieved (2-3 mins).

  • 2.

    Slowly drizzle in oil while blending until required consistency is achieved (the amount of oil used can differ dependant on environmental conditions).
