Place pork belly in a roasting tray skin side down and pour in 100ml of water, then pour over all marinade ingredients.
Cover with foil and roast at 200C for 1 hours.
Remove foil after 1 hour and flip the pork to skin side up, sprinkle with sea salt, add another 150ml of water and return to oven for a further 30 minutes.
