Peking Salmon

Ingredients

  • 300g fillet Atlantic salmon

  • 1 bunch spring onion finely shredded

  • 2 long green chillies sliced

  • 1/2 bunch of coriander

  • 200g beansprouts

  • 1 finely shredded carrot

  • 100g snow pea tendrils

  • 1 tsp Tamarind paste

  • 50ml Kikkoman’s teriyaki marinade

  • 50ml Kikkomans lime lemon grass and soy marinade

  • 50ml Kikkoman’s roast garlic marinade

  • 50g caster sugar

  • Pancakes

  • 100g plain flour

  • 100g rice flour

  • 100g cornflour

  • 2 egg whites

  • 100ml water

  • Pinch of salt.

Method

  • 1.

    Combine all marinades in a bowl add the tamarind paste then smear all over the salmon, allow to sit for at least 20 minutes then bake in oven at 250 degrees for 10 minutes

  • Pancakes:

  • 1.

    In a non-stick pan make the thinnest crepes you can

  • 2.

    Serve on a platter with the Shredded onions, chillies, coriander, beansprouts, carrots, snow pea tendrils and cooked salmon

  • 3.

    Place a little bit of everything into a pancake roll and eat
