Thai Steamed Tuna

Ingredients

  • 1 can tuna chunks in spring water

  • 4 spring onions, finely sliced

  • 1 tsp red Thai curry paste

  • 100g rice flour

  • 2 eggs

  • 1 tsp bi-carb soda

  • 1 baby cos lettuce

  • 100ml sweet chilli sauce

  • ½ cup fried shallots

Method

  • 1.

    In a large mixing bowl combine tuna, onions, curry paste, rice flour, eggs, bi- carb and mix until almost smooth.

  • 2.

    Form into patties about the size of a tablespoon and place on large lettuce leaves in bamboo steamer for 5 -8 minutes or until just firm.

  • 3.

    Serve in baby cos leaves with a drizzle of sweet chilli and fried shallots.
