Chicken Soup

Ingredients

  • 1 whole chicken

  • 1 brown onion, roughly chopped

  • 1 stick of celery, roughly chopped

  • 1 carrot, roughly chopped

  • 1 tsp ground ginger

  • 1 tsp crushed garlic

  • ¼ preserved lemon

  • Salt and pepper

  • 4-5 litres cold water

  • Coriander, to garnish

  • Parsley, to garnish

Method

  • 1.

    Place all ingredients into a large saucepan and cover with water, bring to a boil with the lid off, when boiling turn down to a very low simmer and cook for ½ an hour.

  • 2.

    After ½ an hour of simmering pull the breast meat away from the chicken and set aside, continue cooking with a lid on for at least 2 hours.

  • 3.

    Strain the soup well and serve with shredded chicken breast, chopped parsley and coriander.
