• 200g filo pastry (defrosted)

  • 100g bean sprouts

  • 1 carrot finely shredded

  • 6 spring onions finely shredded

  • ¼ bunch coriander finely chopped

  • 50g bamboo shoots finely chopped

  • 50g water chestnuts finely chopped

  • 100g baby sweetcorn finely chopped

  • 1 long green chilli (de-seeded) finely chopped

  • 200g frozen peas

  • 60ml sweet soy sauce

  • Canola oil spray


  • 1.

    Place all vegetables and herbs together in a bowl and toss.

  • 2.

    Pour over the soy sauce and allow to marinate for about ½ hour.

  • 3.

    Lay down one sheet of filo pastry and lightly spray with canola, repeat this process with four more sheets of pastry then spoon in some marinated vegies, roll and fold into a small parcel.

  • 4.

    Place on a lined baking sheet and bake at 200 degrees for 30 minutes.
