Pork Fillet Roulade

Ingredients

  • 1 whole pork fillet

  • 200g minced beef

  • 1 brown onion, finely diced

  • ½ a cup of bread crumbs

  • 2 tsp horseradish

  • 10 capers

  • 2-4 anchovies

  • ½ cup of chopped basil

  • 1 egg

  • Salt and pepper

Method

  • 1.

    In a large bowl combine all the ingredients (except the pork,) and massage together.

  • 2.

    Trim the pork fillet of all fat and sinew, cut down the middle then bash with a meat mallet until thin.

  • 3.

    Lay the mince mixture onto the thin pork, then roll over until a roulade is formed, wrap with oiled foil and place in an oven tray with about an inch of water, cover with foil and bake at 200 degrees for 30-45 minutes.
