This is a very honest and simple dish to make. It's great served for breakfast on its own or with poached eggs and fried tomato. Served with meat and salad it can also be part of a main course.
Part cook the potatoes in boiling water for 4 to 5 minutes only, no longer. Allow to cool. Chop into small cubes.
Heat the oil in a fry pan and sauté the chopped onion and bacon. Remove from pan.
Add a little more oil if necessary and fry the potato pieces, turning until golden brown.
Return the onion and bacon to the pan and mix through.
Season with salt and pepper and lastly stir through the parsley.
