Sticky Nashi Puddings

A new take on an old favourite - Sticky Pudding

Ingredients

  • 2 large nashi

  • 1 cup Sugar

  • 0.33 cup Water

  • 100 g Butter

  • 2 Eggs

  • 0.5 teaspoon vanilla essence

  • 0.33 cup brown sugar

  • 1 cup Self Raising Flour

Method

  • 1.

    Preheat oven to 180C.

  • 2.

    Peel and slice nashi into 4 thick round circles.

  • 3.

    Set aside.

  • 4.

    Finely dice the remaining nashi.

  • 5.

    Put sugar and water into a small saucepan and heat until sugar is dissolved and has turned a light caramel colour.

  • 6.

    Pour a little into the base of four large greased non- stick muffin tins.

  • 7.

    Arrange the nashi slices on top of the caramel.

  • 8.

    Melt the butter and leave to cool.

  • 9.

    Beat eggs with vanilla and brown sugar.

  • 10.

    Add butter.

  • 11.

    Sift the flour and stir well to combine.

  • 12.

    Fold in the extra diced nashi.

  • 13.

    Divide the mixture between the muffin tins.

  • 14.

    Bake for 20-30 minutes until set.

  • 15.

    Remove from oven and turn out onto plates.

  • 16.

    Serve warm with extra caramel sauce and cream or ice-cream.
