Whole Chicken Curry

Ingredients

  • 1 whole chicken

  • 1 brown onion, finely chopped

  • 1 stick of celery, chopped

  • 1 carrot, chopped

  • 2 medium potatoes, chopped

  • 3 tbsp curry powder

  • 2 litres of water

Method

  • 1.

    Place all ingredients into a saucepan, put on the lid, bring to a boil then simmer for 25 minutes.

  • 2.

    Remove the chicken from the saucepan, place on an oven tray. Bake at 250C for around 30-40 minutes. In the meantime, continue to simmer the curry for approximately 25minutes.

  • 3.

    Chop the chicken into portions.

  • 4.

    Serve the chicken on top of the curry sauce, which is now thick and lush.

I think James may have put 2 litre in to accommodate a larger chook. I just put a very large chook in the pot and 1 litre only comes up its side, so have rolled it over half way through simmering.
It's a delicious way to cook a chicken though - very more-ish - and leftovers even better.

I cook this recipe all the time, it is one of my favourites as it is quick and easy, I found that one litre of water works much better than two tho as it just took too long to reduce two litres.
