Heat water and brown sugar in a saucepan, stirring to dissolve sugar, and then boil for 10 minutes.
Add figs and vinegar and allow to cool. Combine oil with garlic and brush over pizza dough. Sprinkle with mozzarella, arrange pancetta on top and bake at 220°C for 10-15 minutes or until cooked and golden. Cover with slices of Tasmanian Heritage Red Square cheese.
Combine extra oil with 2 tablespoons fig syrup and use to dress rocket. Place rocket in the centre of each pizza and then sprinkle with figs. Serve immediately.
Quick Pizza Dough:
Combine flour, yeast, salt, sugar, water and 2 tablespoons oil in a large bowl or stand mixer and mix and knead to form a smooth dough. Divide and roll dough out to fit 2 x 30cm pizza trays.
