Remove the crusts from each slice of bread then roll out to half its thickness (using a rolling pin.)
Using a pastry cutter, cut the thinly sliced cape seed slices into circles.Spray a muffin tray with oil, then press the bread circles in, then bake at 190c for about 10 minutes or until crispy.
Mix together the oil, mustard and vinegar to form a dressing.
Chop the ham, onion and tomato, then toss together with the dressing and a grate of cracked pepper, fill each tart case with this mixture then sprinkle with shredded basil.
