In a large bowl combine the pork, onion, chilli, ginger, mint, coriander, chicken stock, egg whites, soy sauce and rice flour, then massage until combined.
Pour the water into an oven-proof dish, mix in the rice and turmeric and stir well, (careful with the turmeric as it really stains almost everything.)
Form the pork mixture into meatballs and place in the rice and water, cover with a tight fitting lid or tin foil then bake at 200c for 40-45 minutes.
