Eggy Breakfast

Ingredients

  • 1 Pane di Casa loaf, sliced

  • 3 eggs

  • 50ml of cream

  • 6 slices of prosciutto

  • 50g butter

  • 2 tomatoes (peeled)

  • Olive oil

  • Pepper

Method

  • 1.

    Mix the eggs and cream together until smooth.

  • 2.

    Butter one side of the Pane di Casa, lay down a slice of prosciutto and top with sliced tomato, sprinkle with cracked pepper, place on another buttered slice of bread and press firmly.

  • 3.

    Heat a fry pan to a medium heat and add a splash of oil. Dip the sandwiches into the egg mixture and press down, allow the bread to absorb a little of the egg mixture. Turn the sandwich to coat the other side with egg before frying both sides.
