Toss the chicken pieces into a large bowl with the olive oil and lemon juice, stir through, coating everything and allow to sit for 15 minutes. Then add the Cajun spices and toss through until the chicken pieces are well coated.
Empty the marinade and chicken into a baking tray then place into a oven set at 250C for 30-35 minutes.
Combine the chopped tomatoes, coriander and beer in a saucepan and bring to a boil then simmer for 20 minutes.
Serve the chicken with crispy lettuce cups, sour cream and sauce.
