Buffalo Chicken and Tomato Salad

  • 2 chicken breast

  • 220g Bocconcini (or 4 large Buffalo Mozzarella)

  • 2 large tomatoes

  • ½ bunch of basil, shredded

  • 1 cucumber

  • 1 cos lettuce, cut the top off

  • 1tbsp mayonnaise

  • Juice and zest of lime

  • 1tsp sweet chilli sauce


  • 1.

    Slice the chicken breasts into 3 cm pieces and mix with half the lime juice and zest, allow to marinate for about 10 minutes.

  • 2.

    Cut the tomatoes and mozzarella into 2 cm slices.

  • 3.

    Separate the lettuce and finely shred the smaller leaves, chop the cucumber.

  • 4.

    Grill the chicken on a hot grill pan for 5 minutes each side.

  • 5.

    Mix together the remaining lime juice and zest with the mayonnaise and sweet chilli.

  • 6.

    Lay the chicken alternately with the tomato, bocconcini and basil, serve on a large lettuce leaf with shredded lettuce and cucumber.
