I had this in a boarding house style restaurant in Savannah, Georgia - where everyone sits at big, properly laid oval, communal tables and food gets passed back and forth. These are the yummiest mashed potatoes - bit of a tang and lots of flavour.


  • 2 kg Potatoes, peeled and cut into small chunks.

  • 1x 440g jar Whole Egg Mayonnaise.

  • 2 Tbsp Dijon Mustard.

  • 2 Tbspn White Vinegar.

  • 1 medium Onion - grated.

  • 1/2 cup Cheese - grated.


  • 1.

    Preheat oven to 180 C.

  • 2.

    Boil Potatoes til tender.

  • 3.

    Drain and mash until completely free of lumps.

  • 4.

    Add the mayonnaise, mustard, vinegar and onion and stir through.

  • 5.

    Place in a casserole and top with the cheese.

  • 6.

    Bake for 15 mins til cheese melts.
