I had this in a boarding house style restaurant in Savannah, Georgia - where everyone sits at big, properly laid oval, communal tables and food gets passed back and forth. These are the yummiest mashed potatoes - bit of a tang and lots of flavour.
Preheat oven to 180 C.
Boil Potatoes til tender.
Drain and mash until completely free of lumps.
Add the mayonnaise, mustard, vinegar and onion and stir through.
Place in a casserole and top with the cheese.
Bake for 15 mins til cheese melts.
