A good basic recipe for American style corn bread. This one has cheese rippled through the centre.

Ingredients

  • 1 1/4 cups Plain Flour.

  • 3/4 cup Corn meal.

  • 2 tspn Baking Powder.

  • 1/2 tspn Salt.

  • 3 Tbsn Sugar.

  • 1 cup Milk.

  • 1/4 cup Oil.

  • 1 cup shredded Cheese.

Method

  • 1.

    Put all ingredients in a bowl except the cheese and mix til just combined.

  • 2.

    Line a loaf tin or square cake tin with baking paper.

  • 3.

    Put half the mixture in the tin.

  • 4.

    Sprinkle over with the cheese.

  • 5.

    Spoon the rest on top.

  • 6.

    Bake in a 180 C oven for 25 mins.

Because this is a basic recipe, there's plenty of scope to add what you want - like corn kernels, chopped capsicum, choped coriander, chili, chopped spring onions etc etc...
