A cold tomatoe, bocconcini, fresh basil and olive oil salad


  • Vine ripen medium per person

  • 3-4 marinated baby bocconcini sliced per person

  • Fresh Basil leaves

  • Oilve oil

  • sea salt

  • ground pepper

  • Garnish: 1/4 avocado per person


  • 1.

    Slice tomatoes and cheese, arrance alternately in a fanned effect on each plate. Shred basil and scatter over tomato and cheese arrangement, season with pepper and sea salt, drizzle with olive oil. Garnish plate with fanned avocado slices to one sdie or as desired. Serve at room temp or lightly chilled.


To make this dish child friendly, substitute bocconcini for grated tasty cheese. Substitute grated carrot for basil.
