Minestrone

This is the version I grew up with. It's so packed with flavour and just the thing to warm you up on a cold winter's night. A good handfull of Parmesan and some crusty bread...very satisfying. I've omitted the pasta and upped the cabbage in the one pictured to lower the carb content.

Ingredients

  • 3 rashers Bacon - finely chopped.

  • 2 Tbsp Olive Oil.

  • 2 Tbsp chopped Parsley.

  • 2 tspn ground Sage.

  • 2 cloves Garlic - crushed.

  • 2 Celery Stalks - finely sliced.

  • 2 Carrots - finely sliced

  • 1 Leek - finely sliced.

  • 1 Tomato - chopped.

  • 4 Potatoes - 2 diced and 2 whole.

  • 2 tspn dried Basil.

  • 1 cup soaked Beans - Borlotti/ Haricott/ or Kidney

  • 12 cups Chicken or Vegetable stock.

  • Salt and Pepper.

  • 1/2 small Cabbage.

  • 1/2 bag Pasta.

Method

  • 1.

    In a large pot, saute the bacon and the onion in the oil for a few minutes.

  • 2.

    Add the Garlic, parsley and sage and cook a few mins more.

  • 3.

    Add the celery, carrot and leek.

  • 4.

    Then the chopped tomato, 2 diced Potatoes and 2 whole ones.

  • 5.

    Then the Basil and the beans.

  • 6.

    Cook for a few minutes stirring constantly.

  • 7.

    Add the hot stock, and salt and pepper and bring to boil.

  • 8.

    Cook covered over a low heat for 1 3/4 hours.

  • 9.

    Add the cabbage and continue cooking for 45 mins.

  • 10.

    Add the pasta 12 mins before the end of cooking time.

  • 11.

    Serve with lots of Parmesan cheese
