Ingredients

  • 2 peeled & seeded Cucumbers

  • 2 tablespoons sherry vinegar

  • 1 green chilli

  • sea salt

  • cracked Black pepper

  • 0.5 cup Extra Virgin Olive Oil

Method

  • 1.

    In a food processor or blender combine the cucumber, sherry vinegar, chilli, sea salt & pepper

  • 2.

    Then drizzle in the olive oil until it's the right consistency and flavour.

Notes

Serve with grilled fish or fresh oysters
Serves 24 oysters
