Recipe by Peter Evans from FISH
2 green mangos peeled and grated fine
1 tablespoon Fish sauce
1 tablespoon Lime juice
1 tablespoon Palm Sugar or white castor sugar
3 finely chopped Thai red shallots or 1 tablespoon finely diced red onions
1 birds eye chilli
julienne Kaffir Lime leaves optional
1 tablespoon Extra Virgin Olive Oil
1 tablespoon chopped Coriander
Mix the ingredients and adjust seasoning using the fish sauce, lime juice, palm sugar & chilli.
