Easy, microwave appetiser for vegetarians. Serve with your favourite crackers, cheese and fruit. Not suitable for those with nut intolerance.

Ingredients

  • 4 tablespoons crunchy peanut butter

  • 1 x 410 ml can condensed tomato soup

  • 2 eggs

  • 3/4 cup breadcrumbs - preferably fresh

  • 1/2 cup mixed fresh herbs finely chopped - parsley, oregano, thyme, basil

  • 1 small onion - grated or fine dice

Method

  • 1.

    Place all ingredients in a mixing bowl and mix well until combined.

  • 2.

    Spray oil a glass loaf container or shallow medium size microwave dish. Cover with cling film or an appropriate lid.

  • 3.

    Microwave for 12 minutes medium wattage microwave oven (slightly shorter for a high wattage microwave oven or slightly longer for a lower wattage microwave oven) on a medium high setting.

  • 4.

    Allow to cool completely before serving.
