• 4 Young coconuts

  • 1 Pineapple

  • 8 Limes

  • 8 Lime leaves

  • 4 tbsp Brown sugar

  • 1 tin Lychee

  • Desiccated coconut

  • Grenadine syrup


  • 1.

    In a cocktail shaker put 1 lime cut in small pieces, 1 tbsp of brown sugar, 2 lime leaves and crush the lot with a wooden pin.

  • 2.

    Cut a coconut open and add the coconut juice into the shaker, mix well.

  • 3.

    Then put the cocktail back in the coconut shell, add a splash of grenadine syrup and a few pieces of pineapple and lychees.

  • 4.

    Cut a quarter of lime, coat in desiccated coconut and stick it on the side of the coconut with a tacky umbrella.
