Shashlik, Skewered Fillet of Beef with Mushrooms, Capsicum and Smokey Bacon

Ingredients

  • 1 kg eye fillet, cut into 3 cm cubes

  • 2 medium onions, cut into 3 cm dice

  • 2 red peppers, cut into 3 cm dice

  • 100 g button mushrooms

  • 200 g thick cut smokey bacon, cut into 3 cm dice

  • Salt, pepper

  • BBQ spicy dry rub

  • 1 tbsp toasted and ground cumin seeds

  • 1 tbsp toasted and ground coriander seeds

  • 2 tbsp dried chilli (not too hot)

  • 1 tbsp black peppercorns

  • 1 tbsp white peppercorns

  • 2 tbsp dried oregano

  • 1 tsp sweet paprika

  • 1 tsp salt

Method

  • 1.

    Coat beef fillet with Dry Spice Rub and Olive Oil.

  • 2.

    Alternate meat and vegetable pieces onto long metal skewers

  • 3.

    Grill on high heat for approximately 6 minutes or until medium/rare, turning regularly.
