Smoked Trout on Betel Leaf with Apple and Salmon Roe

Makes 12.

Ingredients

  • 12 Betel leaves

  • 1/4 cup Horseradish cream (horseradish mixed with sour cream)

  • 100g Smoked salmon or trout

  • 1/4 cup Cucumber (seeds removed)

  • 1 tbsp Parsley (roughly chopped)

  • 1/2 cup Watercress

  • 2 tbsp Chives (sliced)

  • 1 Apple (grated)

  • 2 tbsp Extra virgin olive oil

  • 2 tbsp Lemon juice

  • 2 tbsp Salmon roe

  • Salt and pepper to taste

Method

  • 1.

    Lay out the beetle leaves on a tray.

  • 2.

    Spoon on 1 teaspoon of horseradish cream.

  • 3.

    Gently mix the remaining ingredients and divide amongst the beetle leaves.

  • 4.

    Garnish with a little salmon roe.

  • 5.

    Serve immediately.
