• 200 g pearl meat

  • 1 Lemon juice only

  • 2 tablespoons Extra Virgin Olive Oil

  • 1 tablespoon finely chopped Parsley

  • sea salt

  • cracked Black pepper


  • 1.

    Slice the pearl meat across ways very thinly.

  • 2.

    Heat a wok with the olive oil until nearly smoking and add in the pearl meat.

  • 3.

    Toss in the parsley and take off the heat

  • 4.

    Add in the lemon juice and season to taste. Serve in a polished pearl shell.
