  • 4 Slices white bread

  • 50 g softened Butter French or Danish or best quality available

  • 1 Lemon zest only

  • sea salt

  • cracked Black pepper


  • 1.

    Butter the white bread

  • 2.

    Grate over lemon zest

  • 3.

    Add the sea urchin & season

  • 4.

    Cut of the crusts

  • 5.

    Cut into finger sandwiches

great recipe that enhances the taste of the urchin. It's a pitty they are so hard to find here in Australia.
