This is a nice dessert that simply screams out summer. It is perfect for either restaurants or even just entertaining some close friends.
Using a knife run it around the peach in half, twist and remove the stone.
Get a tray, which can go into the oven.
Put the sugar and water mixture in this tray and place over a medium to high heat on the stovetop. If you choose to use the vanilla pod put it in now. Keep stirring mixture before it burns.
Once sugar had dissolved place the peaches in the tray cut side down. And put into the oven for 15-20 minutes at about 170C
When taken out the peach should feel soft that’s how you’ll know it ready, at this stage you can take off the skin if you wish but remember that the syrup is very hot and will burn if you touch it.
Place two on a plate and serve with vanilla ice cream.
