GREAT SIDE DISH OR LUNCH BOX SALAD

Ingredients

  • 1 X 400 CAN OF KIDNEY BEANS

  • 1 X 400 CAN BUTTER BEANS

  • 2 X 400 CANS OF CANELLI BEANS (OR CHICK PEAS)

  • PUNNET OF CHERRY TOMATOES

  • ½ SALAD ONION FINELY CHOPPED

  • 1 CUP OF GREEN BEANS

  • 1 CUP SALAD GREENS SUCH AS BABY SPINACH OR ROCKET

  • 200 GRAMS OF BACON PIECES

  • DRESSING

  • 2 TABLESPOONS OLIVE OIL

  • ¼ CUP GOOD WINE VINEGAR

  • TABLESPOON MAPLE SYRUP

Method

  • 1.

    FRY OR GRILL THE BACON UNTIL CRISPY. COOK GREEN BEANS UNTIL STILL CRUNCHY ABOUT 5 MINUTES– COOL. SLICE TOMATOES IN HALF. CHOP GREENS.

  • 2.

    TOSS INGREDIENTS IN A LARGE BOWL

  • 3.

    COMBINE DRESSING INGREDIENTS AND ADD TO SALAD JUST BEFORE SERVING.

CAN BE MADE SEVERAL HOURS AHEAD, NICER COLD
