Simple, light pumpkin soup flavoured with Leeks and Paprika


  • 1 Butternut Pumpkin - peeled and cut into small chunks.

  • 2 Leeks - washed and sliced.

  • 10 cups Chicken Stock.

  • 300ml Cream.

  • Paprika.


  • 1.

    Put Pumpkin, Leeks and Stock into a large pot and bring to boil then simmer 45 mins

  • 2.

    Process in a blender or use a stabber blender til smooth.

  • 3.

    Add cream and bring to gentle simmer.

  • 4.

    Season with salt and pepper and sprinkle with paprika
