im not sure where this recipie came from but my mum used to make this for us when we were kids as a very very special after school snack or if we had friends over


  • 370 gm softened butter

  • 1.5 cups sugar

  • 4 eggs

  • 3 cups Pl flour

  • 2 tsp cinnamon (ground)

  • 2 tsp mixed spice

  • 4 tbsp sugar extra

  • Approx 950 gm unsweetened pie apple (you may find you need a touch more or less depending on your preferences)

  • icing sugar for dusting


  • 1.

    Preheat a moderate oven (approx 180c)

  • 2.

    Beat butter and sugar together until creamy then add eggs one at a time beating well after each.

  • 3.

    Stir in sifted flour and spices.

  • 4.

    Spread half the mix over the base of a greased and lined 28x18cm lamington tin leaving enough baking paper hanging over two edges to assist with lifting out when cooked.

  • 5.

    Spread evenly with apple and sprinkle extra sugar over the apple.

  • 6.

    Spread remaining cake mix evenly over apple and bake for appox 50min.

  • 7.

    Leave in tin for 10 min before turning out onto a wire cake rack to cool

  • 8.

    Dust with icing sugar and cut into squares.

  • 9.

    How many squares you get will depend on how big or how small you wish to cut them.


if you wish to make a smaller version just halve all ingredients evenly and make in an average size square cake tin and check after about 30min in the oven
