Salt Crusted Rib of Beef with Pesto Beans


  • olive oil spray

  • 4 rib eye steaks

  • freshly ground pepper

  • sea salt

  • olive oil

  • 2 lemons

  • 24-30 small green beans, topped & tailed

  • pesto

  • freshly grated Parmesan (optional)


  • 1.

    Preheat ridged grill (or BBQ).

  • 2.

    Spray steaks with a little oil, sprinkle with ground pepper and cook over a high heat until well sealed on both sides. Then place on a bed of salt and set aside for 12-15 mins, turning now and again.

  • 3.

    When ready, cook steaks to desired degree, brushing with oil and lemon juice as you do so.

  • 4.

    Cook beans in plenty of boiling water until al dente. Drain well and toss with a little oil, and pesto and Parmesan to taste.

  • 5.

    Serve steaks sprinkled with lemon juice and a little more oil on top and beans on the side.


The steaks can also be served with your favourite potato dish.
