• 4 eggs

  • 100 gm sugar

  • seeds from 1 vanilla bean

  • a pinch of salt

  • a splash of dark rum

  • 100 gm plain flour

  • 350 ml milk

  • softened butter

  • 450-500 gm fresh figs, halved

  • icing sugar


  • 1.

    Preheat oven to 180°C.

  • 2.

    To make the batter, beat eggs with sugar until frothy.

  • 3.

    Add vanilla, salt and rum, and beat.

  • 4.

    Then whisk flour into the egg mixture, little by little, continually beating.

  • 5.

    Add milk and whisk well.

  • 6.

    Arrange figs, cut side up, in a lightly buttered gratin dish (or an ovenproof dish). Then pour the batter over the top, though a sieve. Dot with small dollops of butter and cook in the oven for about 40-45 mins until puffed and golden.

  • 7.

    Sieve icing sugar over the top, before serving with ice cream or whipped cream.

This recipe worked to perfection! Will make every fig season. Tastes delish chilled with spray cream. Was eaten with gusto by family, no left overs.

This recipe was perfection! Whole baking pan was eaten with gusto by my family within a few hours of making it. Tasted delish chilled in the fridge with spray cream on top. Will use this recipe again every fig season.
