Serves 4-6 as a snack.


  • 0.5 punnet cherry tomatoes, halved

  • 2 spring (green) onions, sliced

  • 1 avocado, peeled & sliced

  • juice of 1 lemon

  • a good slurp of olive oil

  • sea salt & freshly ground pepper

  • 4 flour tortillas

  • grated tasty cheese

  • olive oil spray


  • 1.

    Gently combine tomatoes, spring onions, avocado, lemon juice, oil, salt and ground pepper. Taste for seasoning.

  • 2.

    Spray tortillas with oil and top with cheese. Spray the edge with a little oil, top with another tortilla and fry on both sides in a lightly oiled pan until golden brown.

  • 3.

    Cut quesadillas into wedges and serve with a spoonful of the salsa on top.
