Pork on a Stick


  • 4 large wooden skewers

  • 2-3 pork fillets, trimmed of all fat & sinew & cut into even chunks

  • 12 chipolatas

  • 3 lemons, cut into quarters

  • 12 fresh bay leaves

  • 12 cubes of firm sourdough bread

  • olive oil spray

  • 3 tbsp chopped fresh rosemary

  • sea salt & freshly ground pepper

  • olive oil

  • 16-20 small green beans, topped & tailed


  • 1.

    Preheat oven to 180°-200°C.

  • 2.

    Soak skewers in cold water for about 30 mins.

  • 3.

    Then thread skewers with pork, chipolatas, lemon, bay leaves and cubed bread.

  • 4.

    Place skewers in 1-2 lightly oiled baking trays. Sprinkle with rosemary, seasonings and a generous amount of oil. Cook in the oven for about 10-12 mins, turning once.

  • 5.

    Blanch beans in plenty of lightly salted, boiling water until crisp-tender. Drain well and then toss with a little oil and seasonings.

  • 6.

    To serve, arrange beans on individual plates and top with a skewer.
