Easy, picnic style eggy vegetable slice


  • 350g Zucchini - grated

  • 1 large Carrot - grated

  • 1 large Onion - finely diced

  • 3 rashers Bacon - diced

  • 1 cup grated Tasty Cheese

  • 1 cup Self Raising Flour

  • 1/2 cup Oil

  • 5 eggs

  • salt and pepper


  • 1.

    Put everything into a large bowl and mix well.

  • 2.

    Pour into a wide loaf tin lined with baking paper.

  • 3.

    Bake 180 C oven 40 mins til golden brown

I made this today for lunch. Very tasty recipe. I baked these in a muffin tin to entice my kids to eat. My four year old loved these and devoured 2 muffins as soon as they came out. These are great and are a healthy lunch or snack for any age. Thanks :)
