It is a refereshing spring dish that uses a lot of ingredients that are in season.

Ingredients

  • 10 peeled and Deveined Green Banana Prawns

  • 1 ½ Cups of Sweet Chilli Sauce (Fresh Chilli, Palm Sugar, Garlic and Sesame Oil)

  • A Dash of Lime Juice and Zest

  • 1 package of Rice Noodles

  • ½ Bunch of Mint

  • ½ a Purple Cabbage

  • ½ a Chinese Cabbage

  • 100g of Snow Peas

  • 1 Capsicum

  • 1 Spanish Onion

  • 1tbsp of Vegetable Oil

    Marinade and glaze

  • 3.

    Add the sweet chilli and lime juice together to create a thick sauce. Add the prawns and leave for 24 hours to marinade.

    Minted Asian Slaw

  • 5.

    Chiffonnade the cabbage and the minted whilst blanching the noodles. Julienne the capsicum and the snow peas. Slice the Spanish onion Asian style. Add together in a bowl and toss together. Lightly season and dress to taste. Cook the prawn in a pan with oil. Cook until prawns turn pink. Serve slaw in a bowl then arrange the prawn on top of the slaw. Drizzle sweet chilli and lime sauce over the prawns.
