Marinade and glaze
Add the sweet chilli and lime juice together to create a thick sauce. Add the prawns and leave for 24 hours to marinade.
Minted Asian Slaw
Chiffonnade the cabbage and the minted whilst blanching the noodles. Julienne the capsicum and the snow peas. Slice the Spanish onion Asian style. Add together in a bowl and toss together. Lightly season and dress to taste. Cook the prawn in a pan with oil. Cook until prawns turn pink. Serve slaw in a bowl then arrange the prawn on top of the slaw. Drizzle sweet chilli and lime sauce over the prawns.
