Tuna Mornay Crepes

Cheesy Tuna Mornay flavoured with wine and herbs stuffed into crepes and baked til slightly crispy outside and melted inside

Ingredients

  • Crepes:

  • 1 Egg

  • 115g Plain Flour

  • 300ml Milk

  • pinch Salt

  • Mornay Filling:

  • 2 Tbsp Butter

  • 1 Onion - diced

  • 2 clove Garlic - crushed

  • 2 1/2 Tbsp plain Flour

  • 1/2 cup White wine

  • 2 cups milk (or half milk and half Cream)

  • 1x 425g can Tuna (in brine or springwater) including liquid.

  • 2 tspn Chicken stock powder

  • 2 tspn Worcestershire sauce

  • 2tspn dried Tarragon

  • 1/2 tspn Dill

  • juice 1/2 Lemon

  • 4 Eggs - boiled and chopped

  • 1/2 cup peas - cooked

  • 1 cup shredded Cheese

  • salt and pepper

Method

  • 1.

    Combine the ingredients fo the crepes and set aside for 20mins

  • 2.

    In a large pan - melt the butter and saute the onion and garlic.

  • 3.

    Add the flour and fry for 1 minute.

  • 4.

    Add the wine and keep stirring for 30 seconds.

  • 5.

    Add the milk and stir til thickened.

  • 6.

    Add all the other ingredients and continue cooking, stirring the whole time.

  • 7.

    Take off the heat and set aside.

  • 8.

    Cook the crepes in a hot pan.

  • 9.

    Spoon the filling into each and roll up and place in a baking dish.

  • 10.

    Top each with more shredded cheese and bake in a 180C oven for 20 mins.

Notes

You can also just serve the Tuna Mornay over rice or make little Tuna pies with Puff Pastry baked in the oven till golden
