Apricot Pork Loin Cutlets

FRUITY PORK DISH, A CLASSIC WITH TWIST

Ingredients

  • OLIVE OIL

  • 1 ONION CHOPPED

  • 4 PORK LOIN CUTLETS, TRIMMED FROM BONE OR USE PORK STEAKS

  • 1 PACKET OF FRENCH ONION SUP MIX, POWDERED

  • 1 CAN PRICOT NECTAR

  • 1 CAN APRICOTS HALVED IN JUICE

  • SEASONING S AND P

  • SIDE

  • 2 LARGE CAROTS, CHOPPED THEN BOILED OR STEAMED

  • COOKED WHITE RICE FOR4

  • COMBINE

Method

  • 1.

    HEAT OIL

  • 2.

    ADD THE ONIONS AND COOK 2 MINUTES

  • 3.

    ADD THE PORK TO THE PAN AND COOK OR APPX 7 MINS EACH SIDE

  • 4.

    REMOVE THE PORK

  • 5.

    ADD THE SOUP MIX TO THE PAN

  • 6.

    STIR AND ADD THE TINS OF APRICOTS AND NECTAR

  • 7.

    PLACE THE STEAKS BACK IN THE SAUCE

  • 8.

    SIMMER 10 MINUTES TILL THICHENED

  • 9.

    SERVE WITH RICE OR RICE WITH VEGIES
