Pancetta And Basil Wrapped Chicken Breast

a delicious pancetta wrapped browned chicken piece on a bed of home made pasta with a creamy sundried tomato pesto sauce.

Ingredients

  • 1 double chicken breast

  • 4 tsp minced garlic

  • salt and pepper

  • 16 basil leaves

  • 4 tsp butter

  • 4 sundried toatos

  • 16 slices of pancetta or prosiutto

  • olive oil

  • 200g plain flour

  • 2 eggs

  • 4 tbsp sundried tomato pesto

  • 1 carton pure cream - 300ml

  • salt and pepper

  • parmesan cheese

Method

  • 1.

    Slice your chicken breast into 2 and then each single into 2.

  • 2.

    Lightly tendorise and flatten

  • 3.

    Spread 1tsp garlic on each breact

  • 4.

    Place a sundried tomato and a spoon of butter at the end of each breast - what ill be the centre of the roll

  • 5.

    Place 4 basil leaves overlapped to cover the chicken breast or sprinkle dried basil

  • 6.

    Roll each breast up, starting fron the tomato & butter end

  • 7.

    Lay out your pancetta. bacon or prosuitto overlapped - 4 slices for each breast

  • 8.

    Tie up with kitchen twine

  • 9.

    Heat olive oil in pan and cook each piece till browned and cooked through

  • 10.

    Place in a warm oven and reserve pan juices

  • 11.

    While your chicken is cooking prepare your pasta-

  • 12.

    200g of flour on a bench or in a bowl

  • 13.

    Add 2 room temp eggs

  • 14.

    Bring togther in a smooth dough

  • 15.

    Salt optional

  • 16.

    Roll your pasta out or put through a pasta machine

  • 17.

    Cut into 15 cm rounds or squares

  • 18.

    Dust with flour and set aide

  • 19.

    Heat pan and juices and add the pesto

  • 20.

    Cook for a minute and then add the cream

  • 21.

    Cook at a medium heat untill cream thickens and then season

  • 22.

    Boil a saucepan of water and add the pasta

  • 23.

    Boil for appx 2-3 mins

  • 24.

    Till they float

  • 25.

    Remove and drain

  • 26.

    Cut the strings from te chicken

  • 27.

    Place a little sauce on plate

  • 28.

    Then a pasta round

  • 29.

    And repeat 4 times

  • 30.

    Top with the chicken and spoon your sauce over

  • 31.

    Garnish with parmesan cheese

  • 32.

    Serve

Notes

pancetta or prosciutto can be used - even thin sliced bacon

fresh lasagne sheets can be cut and used in place of home made pasta

sounds delicious..... Have just made my pancette and prosiutto so will try this one
