Honey Vanilla Butter

A sweet and fragrant butter that melts easily on freshly made pancakes, crepes and crumpets. This is a real hit with kids!


  • 1/2 cup butter, soften

  • 1/2 cup runny honey

  • 1/2 cup whipping cream

  • 1 tsp vanilla extract


  • 1.

    Soften the butter by leaving it out of the fridge and bringing it to room temperature.

  • 2.

    Cream the softened butter with the honey with an electric beater.

  • 3.

    Slowly add the whipping cream and beat until the mixture is pale and fluffy. Then add the vanilla extract.

  • 4.

    Mix all ingredients together until well-combined.

  • 5.

    Let mixture stand for an hour to marry the flavours.

  • 6.

    Pile the butter into cling film or waxed paper, shape into a sausage and roll the film around the sausage, twist both ends and refrigerate until firm.

  • 7.

    Just before serving, cut butter into disks, remove film from discs and place atop warm food at the last minute and let it melt.
