Spicy Egg Plants or Brinjals

This dish is cooked without oil and is a good combination with fried fish.


  • 200 gm egg plants - cut into 3 cm cubes

  • 3 tablespoons thinly sliced fresh young ginger

  • 2 cups hot water

  • 2 cups spring onioins - cut into 5 cm in length

  • Ingredients A

  • 6 tablespoons chillie bean sauce - from the Asian grocery shop

  • 3 tablespoons fish sauce

  • 2 tablespoons kicap manis/ sweet soy sauce - from Asian shop

  • 1 tablespoon black pepper


  • 1.

    Put 2 cups of hot water in a non stick pan

  • 2.

    Add egg plants and ginger

  • 3.

    Simmer covered for 3 mins

  • 4.

    Add Ingredients A, mix well and simmer covered for 5 mins

  • 5.

    The dish should not be too wet nor too dry

  • 6.

    Finally add the spring onions - stir well and serve with rice and fried fish


This is a very healthy dish and all vegetarians can have them. You can use sambal olek plus 1 tablespoon of Miso instead of chillie bean sauce.
