I LOVE this! Whenever I have left over bbq. chicken I instead of using it for snack food, I turn it into a quick, energy producing snack. Actually, it's my breakfast of choice!snack
Using a noodle bowl, I place some cooked basmati rice, then break in an egg & give it a quick swirl with a fork.
I then add some cooked bbq chicken, spring onions, chopped red chillies if using & soy sauce to taste.
Cover the bowl with cling wrap, place in the microwave oven on 100% for approx. 1 & 1/2 mins. Naturally the time will need to be adjusted according to oven-if you have a sensor reheat model, this should be an ideal setting to use.
