A very old recipe passed down from the Scottish side of the family. Although we called then "Singing Hinnies", I have seen other "Singing Hinny' recipes which bear no resemblance to these yummy morsels!
Sift flour & salt
Add beaten egg, currants & milk.
Lightly grease a frying pan and heat.
Place spoonfuls of the mixture into the pan .
Fry until golden brown.
Place onto a serving plate and sprinkle Castor sugar on top to serve.
Makes approx 10- 12 dependent on how big your spoonfuls are.
